Salmon Teriyaki

Do you know that salmon is a stress-busting superfood? I didn't know that, too and actually can't confirm if it's true. I just read that somewhere and thought it can be quite a cool opening sentence to this recipe post lol. Kidding aside, fact or fake, eating salmon really does bust stress away! At least for us, my husband and I, who love the fish down to its pink meat. So when I knew that Seaking, a brand I love buying at the supermarket, now has wild-caught Alaskan salmon, I got excited for my salmon-loving better half. 


You see, Seaking's salmon cuts are not farmed so they don't feed from chemically-enriched fish food. It's clean, fresh-smelling and so convenient to use! It comes in three cuts  slab, steak and chunks. It's a life-saver, I tell you. Allow me to share with you this latest recipe that I've tried doing and had been successful at for the first time!

I've watched several recipe videos on Youtube first before I made this and decided to go with the great Gordon Ramsay's recipe. And because I didn't want to use alternative ingredients (since this is my first time cooking it), I bought a whole bottle of authentic mirin for a recipe that requires a tablespoon of it. Haha, I'm that hardcore.


OK, before I bore you with my random ramblings, here are some things that you need to take note of prior cooking:


  • When Chef Gordon cooked his salmon teriyaki, he served it skin side up. I didn't do that as mine didn't look visually enticing. Maybe next time. You may watch his video here.
  • It's best to marinate it overnight but it tastes as wonderful with at least an hour.
  • I used organic honey (from Abra) instead of maple syrup.
  • Please use authentic mirin and if possible, a lighter soy sauce. We don't want to ruin our precious salmon.

Ingredients:

- 2 packs of Seaking Salmon slab (makes 4 fillets)
- 1 medium knob of ginger, julienned
- 3 cloves of garlic, minced
- 1 tbsp mirin
- 2 tbsp honey
- 3 tbsp soy sauce
- olive oil
- salt and pepper


Procedure:

1.  Mix honey, soy sauce, mirin, garlic, ginger and drizzle of olive oil in a bowl. Set aside as you prepare the salmon.

2. Gently slice the salmon slab across the grain into two. Place it in a dish and season with salt and pepper. Pour the marinade and make sure it covers all sides of salmon. Cover and refrigerate (not in the freezer) for at least an hour, best if overnight.

3. Fry skin side down first in a non-stick pan for two minutes. If you'll use a traditional kawali, pour a tablespoon of cooking oil first. Flip on the other side and fry for a minute. Then pour the remaining marinade. By this time, I realized how ugly the skin side looked so I flipped it again and cooked it for another two minutes, basting it like I mean it as to also help thicken the sauce. 

4. I served it with stir fried kangkong and buttered baby potatoes over steaming white rice. You can do that, too or however you like it! Enjoy.
