Creamy Corned Beef Rice

I love breakfast food! I love corned beef! I can eat breakfast food for lunch, snack or dinner. I can cook corned beef with anything. I have tried it with the usual potato cubes, sayote, carrots, shredded cabbage, tomatoes and also added it to my omelette. You see, the possibilities are endless. I buy canned corned beef whenever I shop for groceries. It's usually the last can standing in my grocery cupboard. Yup, it's my "emergency food".


And today, I cooked it with the rest of what I have in my kitchen. So it ended up as Creamy Corned Beef Rice. It's easy to cook and super kid-friendly, too. In fact, my preschool popstar finished her share without me prodding her to. Here's the recipe!

Ingredients:

-175 gms canned corned beef
-155 gms green peas
-2 cloves of garlic, minced
-1 medium red onion, minced
-1 medium potato, cubed
-1 tbsp butter
-1 tsp cooking oil
-1/4 cup milk (or 1/8 cup cream)
-1/4 cup warm water
-1/2 cup (or more if you like) grated cheese
-salt and pepper to taste
-steamed rice

Procedure:

1. In medium high fire, heat butter and oil in a skillet. Immediately put onion and garlic. Make sure not to burn them. Let them release their natural juices for about 30 seconds.

2. Put the cubed potato and stir fry. Mix in the corned beef and season it with salt and pepper.

3. Add the water and bring it to a boil.

4. Once it boils, add the green peas and cook until tender. (Well, I just did it 'cause my daughter doesn't like it crunchy.)

5. Pour the milk. Make sure you do it when the heat is low so it won't curdle. After like 45 seconds or a minute, you may put off the fire and let the remaining heat make the sauce creamy.

6. Using an oven-safe dish, plate the corned beef with steamed rice as its bedding and generously top it with grated cheese. 

7. After plating, you may bake it in a pre-heated convection oven at 325 degrees Fahrenheit for 3-5 minutes or until the cheese melts. Or in a microwave oven for 4 minutes in medium heat. If you don't have those, you may enjoy it as it is! Chow time. :)

  2. Looks so yummy!!! I shouldn't be looking at food photos at all! The pregnant me is a munch monster!!! I love corned beef, too. What brand do you buy?

    1. I love Highlands Angus corned beef! But I also use Argentina. Both taste good. :)

  4. My son loves corned beef! This is my "go-to" meal as well when running out of time but we've never cooked it this way. Will try this next time.

  5. looks yummy Denise! we use highlands cornbeef pero what we do is we put malunggay leaves. But i like the idea of cornbeef with cheese. Ma try nga yan, hehe!

    1. I used Cowhead fresh milk here. But you can use canned evaporated milk or full cream milk naman. :)
